An organic and low intervention wine from the DO region of Manchuela on the hills of Valencia. Altolandon uses organic practices, choosing natural fertilisers and believe in letting the wine speak for itself. They use native yeasts and prefer to not interfere.
Planted 1100 meters above sea level, 100 year Garnacha grapes benefit from the great fluxuations in temperature helping them to ripen evenly and maintain their acidity. Clay soils and old vines give a more concentrated flavour. Spontaneous fermentation in open barrels and clay vats. Wine spends 8 months aging, half in new french oak and the other half in clay vats, where malolactic fermentation takes place.
Mature red fruits and candied fruits with floral notes and a hint of balsamic vinegar. Ripe grippy tannins and a pleasant acidity.
Pair with demi-cured cheeses, veal, white and cold meats.
