We From an American winemaker classed almost as royalty, Rory Williams, comes this minimal intervention carignane. Rory’s father is prestigious owner and winemaker of Frogs Leap and his mother set up Tres Sabores. Wine making is very much in his blood and he strives to create wines that are historic, traditional and honour the land he grew up in.
A blend of carignane grapes from two vineyards, the majority from the Rovera Vineyard where organic vines are planted in sandy-quartz soils and are 77 years old. These grapes bring density, body and savoury notes. The rest of the grapes come from a dry farmed, gravel soil vineyard called Cemetery vineyard. Again, it is organic and vines here are 65 years old. These grapes add more precise fruit and lifted aromas. The resulting blend is rich, generous and slightly savoury. Raspberry, blackberry and a hint of cherry, stoney and smokey with a touch of spicy oak and a little wild herb.
Grapes are separately pressed fermented and aged with some wild fermentation and only a small percentage in american new oak. After 15 months of aging, wines are blended and bottled with a light filteration.
Excellent with lamb.
