Winery Background Information
The Chioccioli Estate has its own winery in Gaiole in Chianti and its vineyards are located in two areas with the most suitable terroir in the Chianti Classico area: Gaiole in Chianti and Quercegrossa. Brothers Enrico and Niccolo Chioccioli Altadonna work tirelessly to produce wines of the very highest quality. Every stage of production is performed manually, from pruning the vines through to harvesting and making the wine.
The grapes are grown in the family owned vineyards, located in the most suitable production areas for the Chianti Classico: Gaiole in Chianti and Quercegrossa. After a thorough green harvest, the grapes are hand-harvested in small boxes, cooled overnight and then worked on the double sorting table before the high technology destemming machine for the perfect selection of the grapes.
The fermentation takes place in small stainless steel tanks, conical vats. After a long marceration on the skins the wine is poured directly into French oak barrels where the malolactic fermentation takes place. It rises in barriques”sur lies” for 14 months. After bottling, it ages min 3 months in bottle before being released in the market.
Chianti Classico goes very well with meat dishes such as ossobuco, leg of lamb, lamb chops, roast, wild duck, venison and pizza with meat. As for the cheeses: Chianti Classico fits well with fresh young cheeses or semi-mature cheese and Italian Taleggio.
