The Corvers and Kauter families between them have five hundred years of winegrowing history in the Rheingau, one of the world’s most iconic wine regions. Now led by Dr Matthias and Brigitte Corvers, whose family comes from Rudesheim, their 12 hectares of gravity-defying organic vineyards are planted around the villages of Oestrich and Winkel in the traditional manner on the steep banks of the Rhine. The vast majority of their vines are Riesling, with some Pinot Noir and a smattering of the very rare Roter Riesling, whose pinkish berries are the result of a colour mutation, and usually bunches feature both pink and white grapes. Oestrich-Winkel is its heartland, with Corvers-Kauter one of just a handful of producers in Germany and Austria still harvesting it.
Mild winters and warm summers; the vineyards are protected from cold winds by the forest-capped Taunus Hills and benefit from the heat-reflecting surface of the Rhine. This is from the special Baiken Rauenthal vineyard with red, iron-rich, slate soil.
Hand-picked and hand-sorted fruit is then gently and slowly pressed. Stainless steel fermentation with natural settling and lees contact. No malolactic fermentation
Baiken is a true cool-climate wine with subtle mint aromas that are characteristically embedded all paired with fine acid that plays on the palate. Lean, steely, notes of lime, floral and, above all, super fresh.
A pretty versstile wine that’ll pair with a variety of seafood including meaty fish and shellfish, as well as a range of poutly and, of course, Asian food and spiced dishes.
