Deep inky purple in appearance with aromas of black plum, mulberry, a hint of white pepper and dried apricot. The palate expresses dark plum, mixed fruit spice, liquorice, chocolate and cedar oak with a framing tannin finish.
With regular vineyard visits, the fruit was picked once rich flavours and ripe tannins had developed. The fruit was cold soaked and cofermented with a small amount of Viognier. The wine was then pressed and settled. A portion was stored in stainless tank to retain lively fruit freshness and the remainder matured in a combination of new and used American oak barrels for 12 months before blending and bottling.
