Third release in the Distillery Collection series from Diplomatico. Each release showcase a different process used to create their rums.
At the foot of the Andes Mountains in Venezuela is the choosen site for the Diplomatico distillery. Chosen for it’s fertile soils and unique ecosystem, this area produces high sugar content sugar cane. The sugar cane for this rum sees copper pot distillation. First used in Scotch whisky production, the copper pot still was introduced in 1959 at La Miel and favoured a more controlled way of production due to it’s discontinous system. Diplomatico’s rums are aged in a mox of French and American barrels, the majority of which are ex-bourbon or ex-malt/grain barrel with varying toast levels.
Well balanced nose of red fruits, tropical notes, vanilla nd honey. Well structured on the palate, fine wood, coffee and dark chocolate. An elegant rum, complex with a long finish. This method produces a weightier style with a richer profile.
