Soils: Some slate and clay in the Tavel parcels, and a mix of sand, pebbles (‘galets’) and clay in the Roquemaure vineyards.
Age of vines: 35-95 yrs old
Viticulture: Biodynamic (certified). No copper used whatsoever, and sulphur only when absolutely necessary (not every year). The treatments consist mainly of essential oils and herbal infusions. They recently left Demeter as they do not feel they are strict enough, opting instead for a certification from ‘Nature et Progrès.’ Vineyards: They farm 5.5 hectares across different terroirs. Most of their reds come from 3 ha in Tavel on a mix of soils including slate, clay, sand, and calcareous soils with ‘galets.’ The rest are in the Roquemaure commune (Lirac) and feature more sandy soils (decomposed silice). Here they also have a few red grapes but this is where the majority of their white grapes come from. Their vines average 60 years old, with their youngest at 26 years old and their oldest, a parcel in Tavel which Christian inherited from his grandfather, at 95 years old.
Vinification: The varieties are all co-fermented 100% whole cluster in steel tanks. Pressed after 2-3 weeks maceration then returned to tank to finish fermentation, where the wine then spends 3-4 years on its fine lees with 1-2 rackings only if necessary (no wood used). The wine is transferred into another tank prior to bottling where natural sedimentation occurs, then bottled by gravity with no sulphite additions throughout the entire process. Unfined, Unfiltered. Total production = 2500 bottles
