Vincent Girardin has firmly established himself as one of Burgundy`s pre-eminent wine producers. His 15 hectares of Domaine owned vineyard represent 25 different Burgundy appellations, all treated with the same meticulous attention. One of the leading modern winemakers, using appropriate enhancement of new oak whilst emphasising the unique character of each appellation. Vincent Giradin makes intense well-flavoured Chardonnays from `en Remilly`, with emphasis on richness, mineral character and the toasty aromas of new oak.
Viticulture
Saint Aubin is located in the Côte de Beaune and includes clay and limestone soils that overlook Puligny and produce the best 1er Crus of the appellation. The vines are approximately 50 years old and are located in the commune of Saint-Aubin on a steep hillside above the hamlet of Gamay. Soils here are shallow limestone, stony and sloops are south-facing. The pruning is done in Guyot with different works during the green season. (Disbudding, trellising, topping).
Winemaking
Grapes are harvested manually with sorting happening both on vine and then in the vat before finally being pressed (pneumatic press) to obtain a slow extraction. After extraction, the grapes is barreled after a slight settling. They are put in French oak barrels of 500 liters (10 % of new barrels) in which the alcoholic and malolactic fermentations in yeasts and native bacteria will take place. Breeding will be long on fine lees for 15 months without stirring. One month before bottling, the wine from different barrels is placed in a stainless steel tank for blending. Fining and light filtration is done before bottling. Bottling is done according to the lunar calendar.
Taste
A rich and powerful wine, with a woody, toasty notes and delicate fruits and flowers follow one another in harmony. It’s minerally and long, with a salty finish.

Absolutely delicious with a range of meaty fish, creamy risottos, chicken and guinea fowl.
