A light bodied pet nat from Testalonga made from 100% Colombard. Grapes come from vines planted in 1998 on decomposed granite soils that have always been organically farmed. Grapes are hand harvested and under go natural fermented in stainless steel. Also racked 6 times during process to remove sediment. The wine is bottled and crown capped at a high sugar concentration and under goes second fermentation in bottle. 10 months later and the wine is riddled and disgorged, topped up with the same wine and crown capped. No sulphur or fining agents are added.
Off Dry in style with a good balance of acidity, sugar and bubbles.
Maker of the wine Craig Hawkins has travelled all over Europe and previously worked for Lammershoek before setting his own wine making company up with his wife. His wines are experimental, funky and like to push the boundaries. All wines are hand crafted and are from low yields, natural yeast and minimal intervention.
