They view the cellar as a tool to bring out the true character of each grape- the winemaking should amplify what the vineyard has to say. Grapes are taken to the historic Eshcol Winery which dates back to the 1880s. The winery itself holds a lot of history and has been restored several times during its 140 year history.
After a warm summer, grapes were picked a few weeks earlier to preserve freshness. Around 17% of the grapes are fermentated in oak and around 10% of the wine undergoes Malolactic fermentation. Once fermentations have finished, the wine is aged for around 9 months in oak with 5% being new oak.
Inspired by some of their premium wines, the Eshcol wines have all the Trefethen charm in a relaxed but delightful style making it an incredibly approachable range.
Beautifully complex with fresh notes of green apple, lemon, tangerine, and orange blossom. Balanced with excellent texture, bright acidity, and a long, lively finish. It’s rounded but elegant and quite different from your typical Cali chardonnay.
