Distinctive and unusual, Filey Bay Double Oak #2 is the latest Special Release from the Spirit of Yorkshire Distillery. Created from field to bottle with 100% homegrown barley, for this release the distillery have matured their light and creamy single malt whisky in both ex- bourbon and virgin oak casks. Balancing fruity and spicy notes with cream soda and hot cross buns, it’s an ideal Spring whisky and very distinctive.

As with Double Oak #1, the selection process for Double Oak #2 started with sampling a cross-section of first-fill ex-bourbon. From a selection of over 100 casks laid down in 2018, only a handful were selected, all highlighting key characteristics that would work well with the new oak casks. Casks with light fresh characteristics with elevated malty and creamy profiles and with fewer spicy notes. After assembling a beautiful batch of whisky this was then reduced in strength to 50% abv and racked into brand new, never-before-filled, virgin white oak casks from Kentucky.
With such new and active oak, the casks needed sampling, nosing and tasting frequently to ensure balance was maintained in the overall whisky. Our Whisky Director Joe was checking these casks monthly at first, then week by week, as their influence on the whisky grew.
New oak casks are notorious for imparting character but with a lighter charring in the cask, they can impart more esters/fruit flavours, sweetness and spice as opposed to the big vanilla and oak flavours that you might expect from new oak with heavier char levels.
These special casks imbue our whisky with some really amazing and exciting flavours, pronounced fruity notes and soft, sweet, nutty, bread-like flavours. In fact, only 8 casks finally made this whisky. Like all Filey Bay Special Releases it is is un-repeatable, incredibly rare, and absolutely delicious.
