Filey Bay Sherry Cask Reserve #2 Special Release

The fourth ‘Special Release’ and the second edition of the Sherry Cask Reserve is a rich and spicy whisky matured solely in first-fill Pedro Ximenez casks which have been maturing in the warehouse since 2017. Why PX casks? The special releases show a different side to the warehouse and distillery character, in this case, a much deeper and darker whisky when compared to the bourbon matured house style. Pedro Ximenez is amongst the sweetest and richest sherry wines in the world with aromas of honey, jam, raisins and candied fruits. Tasting notes: Rich and fruity with flavours of baked apples, cinder toffee, chocolate orange and fruit cake.
