Vineyards: The grapes for La Selección come primarily from two vineyards, located in Masroig and near Falset. Viticulture here is all based on organic principles with no chemical treatments used, and each vineyard brings to this blend its own character. The climate is mediterranean with cool nights helping to retain freshness in the grapes.
Vinification: 90% of the grapes are destemmed with 10% added as whole clusters.
They kick off fermentation in steel tanks with indigenous yeasts. After 7 days of maceration the wine is pressed and returned to tanks.
The wine spends 8 months in steel on its fine lees, and goes through very light filtration and light sulphuring before bottling.
