A staff favourite at StarmoreBoss, it’s just a FABULOUS wine. There is so much complexity and flavour, it’s hard to take it all in!
From winemaker Andrew Jones who has access to some great parcels of fruit through his work as a vine nursery man (pretty much a vineyard planner/consultant), he has created a whole range of ‘field recordings’ which aim to capture the people and places in a bottle.
This is a blend or organic 90% Cabernet Sauvignon, 5% Carignan, 5% Cabernet Franc from Paso Robles, Santa Barbara. Andrew approaches the wines natural winemaking techniques making them minimal intervention: only natural yeast is used, little to no sulphur is added and they are left unfined and unfiltered.
Tasting wise, expect a pleasant waves of dark cherries, blackberries, milk chocolate, all spice, blackcurrant, smoke, vanilla and a touch of a salty savouriness. It’s lighter than expected, bright and vibrant. It will also drink over 3 days (if you can make it last that long…).
