Winemaking: Grapes growing in limestone & gravel soil in Tattendorf.

Wild fermentation, unfined & unfiltered.

Thermenregion speciality grape. “Petillant Naturel” or “Methode Ancestral” is a wilder version of a sparkling. Is bottled during initial fermentation (still undergrowing) so the sugars from the grapes provide the bubbles.
