The newest estate from Stefano Girelli sees him bringing Azienda Agricola Cortese back to life through organic and traditional wine making down in the South East of Sicily. Sicily’s climate is ideal for organic farming and historical, producers often had no choice but to use organic farming. Traditional winemaking techniques are also used such terracotta fermentation and amphorae. This approach brings together a respect for biodiversity and oranic cultivation and a merging of new and old techinques to showcase the vibrancy of Sicily.
Grapes for the are grown at 400m above sea level and hand harvested late September/ early October. Fermented with skins on a further 15 days of skin contact after fermentation. Some natural malolactic fermentation after removal of skins and aged on fine lees for 6-8 months.
Fresh red fruits and a sophisticated spicy character. Silky tannins and medium body are balanced by a fresh mineral core typical of Sicily.
Ideal with rich pastas, risottos, porcini mushrooms and grilled mushrooms.
