Half way between Sicily and Tunisia lies the most southern DOC of Italy, the island of Pantelleria. A rugged and volcanic island benefits from lots of sun and the cool sea breeze. Made from 100% Zibibbo, the grapes are hand harvested from vines between 20 and 30 years old. Harvest begins in the lower altitude vineyards around the second week of August and finishes in the higher vineyards in late September. The first harvested grapes are left to dry through to the end of harvest. Late harvest grapes start the winemaking process straight away. Dried grapes are added to the fermented juice later in the stage and left to ferment further. It is them stopped by the addition of alcohol once the required sugar content is reached.
Taste
Dried apricot and fruits, complex and elegant. Intense fruits but balance on the palate that linger.
Food Pairing
Serve at room temperature or slightly chilled. Pair with dried fruits and mature cheese.
