Vinification: After a careful harvest and grape selection, work in the winery begins with the passage of the crop through a receiving hopper to reach crusher-stemmer to breaking the grapes gently, so as not to crush seeds, allowing the output of juice that permeates the skins. The crushed grapes are then sent to the tanks to begin fermentation, followed by malolactic fermentation.
