In 2017, fermentation took 2 weeks, and the grapes spent that entire time on skins with regular punchdowns. The wine was then pressed, sedimented for 2 days, then racked into steel tanks where it spent 18 months prior to a light sulphite addition and bottling. Unfined, unfiltered.

Vineyards: The grapes come from their very own “Lopata” and “Stavný Háj” vineyards in their town of Zemianske Sady. The Hlohovec wine region’s history dates back to the 14th century when planting rights were first granted. The vineyards have a South and Southwest exposition and have vines ranging from 10 to 35 years years old. They practice beekeeping in the parcels and encourage a wide amount of biodiversity. Their 17 hectares of vines form a small part of their 350ha farm, where they tend to livestock and also grow poppies, barley, wheat, rapeseed, and more.

In 2016, fermentation took 5 weeks, and the grapes spent that entire time on skins with regular punchdowns. The wine was then pressed, sedimented for 2 days, then racked into steel tanks where it spent 18 months prior to a light sulphite addition and bottling.

Viticulture: The estate is 100% organic since the 2016 vintage. In this 2015 vintage, integrated viticulture was practiced with primarily organic treatments and never any pesticides. As of 2017 Slobodne are now also part of the Demeter (biodynamic) Arbeitsgruppe Waldviertelthe group from Austria.
