Viticulture: Organic (certified) Vineyards: The Riesling grapes for this wine come from the Kröv Letterlay vineyard, boasting a mix of younger plants as well as 45-yr old vines. This vineyard has very shallow soils of grey slate, and the plants tend to suffer in hot vintages although this stress can produce some of the best grapes in the region when handled with Jan’s light touch in the vineyard. The Sauvignon Blanc comes from the nearby Kinheimer Hubertuslay vineyard, also on slate soils.
Vinification: The grape varieties are fermented in steel separately with indigenous yeasts and light skin contact (few hours, though Muscat is a few days). Following fermentation, they get racked and blended into a 1900L old oak foudre where the wine undergoes full natural malolactic fermentation over the course of 2.5 months. Bottled by right after malo and straight out of the barrel to keep a touch of CO2 and floating fine lees for protection against oxygen.
