When Tiago studied part of his oenology degree in Portland, Oregon, he developed a love for Pinot Noir and he had to find the perfect spot to grow it back home and he has chosen a perfect vessel for this grape in this delightfully natural style sparkling.
Using the Method Ancestral the wine is bottled during fermentation without any added yeasts or sugars and is the only Portuguese version of a Pet Nat that we know of. A beautiful pale salmon colour with very delicate notes of raspberry, orange blossom, sour cherry and a little touch of fresh pepper. In the mouth it is refreshing and crisp, with a strong mineral character, almost salty. The crisp acidity provides a lingering mouth finish.
Style: Mouth watering sparkler.
