The volcanic soils lend an intensely mineral flavour to the wine and thanks to the lees ageing and bottle evolution, the wine is beautifully round and elegant with hints of white acacia flowers, fresh almonds and mountain peaches.
The Carricante grapes that make Vivera Etna Bianco are grown on Mount Etna, where the altitude and volcanic soils help to produce this elegant and mineral driven wines.
It was Vivera founder Antonino’s hard work and efforts to plant the vineyard on these unique slopes and to whom the name is dedicated: Salisire means Sali ‘the uphill’ and Sire ‘King’. Which shows that to create a great wine, there is always a hard and passionate work needed.

Farming Practices: Organic.
Vinification: The grapes are destemmed and softly pressed without oxygen.
After fermentation at controlled temperatures, the wine rests on the fine lees for 24 months then it concludes its evolution with a 21 month bottle ageing.
